Honey 
Ibiza has a honey known for its high quality throughout the year. Whether in winter with honey produced from the island's heather in large quantities or rosemary, but also in summer with honey from many varieties of flowers. The fruit of great know-how, the island's honey is appreciated for its great fluidity, never crystallised, and for its unique aromas that stand out from other honeys in the world. Among other things, it has a guarantee mark with the name Mel Certificada d'Eivissa. Today there are 5 producers on the island and 4 packers who alone produce 5000 kg of honey each year.   
 
The Flao 
This pastry, which dates back to the Middle Ages, is surely one of the most enduring traditions on the island and its recipe has been handed down from generation to generation. In the past, each dish was associated and celebrated at a certain time of the year. This was particularly the case of Flao, which was tasted and made by the families of the island for Easter. This cake is now eaten all year round and you can easily enjoy it in the island's pastries and restaurants. Its original taste is composed of eggs, fresh goat's cheese, sheep's cheese but also mint. 
 
The Gato d'Ametlla
Another sweet speciality of the island that is appreciated by all and traditionally prepared for Easter is Gato d'Ametlla, a delicious almond pastry. You'll find succulent notes of vanilla, cinnamon and sometimes even lemon in this dessert whose taste is a little less surprising than that of Flao. This cake comes from the small town of Valldemossa. You won't be able to miss this delicacy, which nowadays has many followers, without any pretext, and we strongly advise you to take advantage of your stay to discover it. 
 
Almond ice cream  
What could be better than a refreshing respite during your visits to Ibiza or relaxing on the beach? Take this opportunity to enjoy an ice cream like you've never tasted before! Almonds have always been used and appreciated in Ibiza's cuisine. In particular, you will have the opportunity to observe many almond tree crops, one of the symbols of Spain. Artisanal almond ice creams are a true jewel of gastronomy for their unique flavour. You will be able to find some in almost all the ice cream shops on the island where this flavour is a must.
